GREENS & RICE CASSEROLE
Rising River Farm

1 c. rice, uncooked    Fresh Basil (or 2 tsp. Dry)
4-5 cups any chopped greens   Paprika for top
(kale, spinach, beet greens, chard,  2 cups grated cheese
 turnip greens, asian greens, etc…) 1 egg, beaten
1 med. Onion    ½ cup milk
5+ cloves garlic, chopped  Salt & pepper


Cook rice. Saute onion, garlic, and spices until translucent. Add chopped greens and bit of water. Stir and cover until greens are steamed. In large bowl mix rice, sautéed vegetables and add ½ of the cheese. Spread in casserole dish. Mix beaten egg with milk and pour over rice, greens, and cheese. Dust heavy or light with paprika (depending on taste). Bake at 350 degrees for about 35 minutes, until edges begin to brown.
