LEMON-DILL CHICKEN
6 chicken
breasts, skinned, boned, and
halved
1 lemon
¼ cup fresh chopped
dill
Salt and Pepper to taste
¼ cup chopped
parsley
1 clove garlic, minced
Butter
Press flattened chicken on sheet of tin foil
large enough for wrapping. Season with salt and pepper. Blend dill, parsley, and
garlic and sprinkle over breasts. Slice lemon in thin rounds and place two
rounds over each breast. Dot each breast well with butter and fold each piece of
foil into a packet. Put packets on a baking dish and place in preheated 350
degree oven. Bake for 30 minutes or until chicken juices run
clear.
