PARSLEY SOUP
-1 tbsp .corn
oil
-4 tsp. flour
-2 cups minced
parsley
-2 cups vegetable stock
-3 whole garlic
cloves
-2 cups skim
milk
-2 tbsp. Sesame seeds, crushed -freshly ground
pepper
-1/4 tsp. Chili
powder
-2 tbsp. Minced onions
-1/4 tsp. Dried thyme
Poke garlic cloves with a toothpick to retrieve when soup is done. Heat oil
in 1 1/2 –quart saucepan; add parsley, garlic, sesame seeds, and chili powder.
Cook over medium heat, stirring constantly, until garlic is translucent. Mix in
thyme and flour thoroughly. Slowly add stock while stirring constantly; cook
until slightly thickened. Stir in milk; heat without boiling. (discard garlic).
Pour into heated bowls, grind pepper over each, and garnish with chives or
onions.
