Tomato and Cucumber Salad
Slice thinly into large
bowl one unpeeled regular cucumber or two pickling cucumbers. Add two large
tomatoes cut into chunks and one medium onion sliced very thinly. Add two
tablespoons oil, two tablespoons vinegar, two tablespoons hone, 3/4 teaspoon
salt and a bit of black pepper. Vary the dressing ingredients to suit your
taste. The idea is a sweet/sour combination with salt to enhance the flavor and
draw out the juices. Serve in bowls. Variation: add a bell pepper, cut in small
pieces.
